Hot water treatment is an effective and affordable postharvest disinfestation technology, and has proven effective in reducing the incidence of anthracnose and increasing the volume of fruit sold. For this reason, it is important to keep mangoes at an ambient temperature after treatment.

Hot water treatment is an important phytosanitary measure in the US. It was approved in 1984 as a phytosanitary measure to be used for quarantine control. Various varieties of mangoes are subjected to the treatment. This treatment helps eliminate major postharvest diseases. The process involves dipping the mangoes in heated water for a short period of time, and then removing them from the hydrothermal tank. After the treatment, the mangoes are placed in a container with an insecticide-free environment. The fruit is then placed in refrigeration for cooling. The temperature of the fruit pulp must be maintained at 46-48 degrees Celsius for 30 minutes. During this period, the moisture content, total soluble solids, pH and the titratable acidity are monitored. After the treatment, the mangoes should be cooled to an ambient temperature and kept in cold storage.

Hot water treatment of mangoes has been developed in India. The National Plant Protection Organisation (NPPO), a phytosanitary certification authority, has made it mandatory for mango exporters to use HWDT before exporting mangoes. This treatment protocol has been developed with industry support. Several exporting countries have also developed hot water treatment protocols for local varieties.
